Fresh, ripe tomatoes are carefully received and meticulously sorted to remove any unsuitable or damaged fruits using the latest sorting technology. The tomatoes are then washed with purified water and lightly sterilized to ensure the highest standards of quality and purity.
The tomatoes are cut into medium-sized cubes using advanced industrial machinery, preserving their natural texture and fresh flavor. The chopped tomatoes are then placed in large cooking pots, and a small amount of salt and sugar are added to neutralize acidity, along with carefully measured amounts of extra virgin olive oil for authentic flavor.
The tomatoes are cooked very slowly over a low temperature of 85 to 95°C, stirring constantly to ensure even cooking and prevent sticking or burning. The cooking process lasts for over two hours, allowing some of the moisture to naturally evaporate, resulting in a thick, rich texture without the use of any artificial additives or preservatives.
Once the ideal consistency and flavor are achieved, the tomato sauce is packed hot into sterile glass jars to ensure freshness and quality are maintained. The jars are tightly sealed, gradually cooled, and carefully stored under the Thaj label, ensuring a natural and authentic product is delivered to consumers.
